Vinification Fruit was fermented whole cluster in a concrete tank for 16 days with very light and gentle foot treading. It was pressed at dryness and the free run was stored in a concrete egg and large, neutral barrels for élevage. Malolactic proceeded naturally. The wine was racked once prior to bottling. Sulfur was not used at any point. The final wine was bottled in June without filtering, fining, or additions of any form.
