Soil Chalk. Viticulture Each of Lassaigne's parcels are farmed organically with extra emphasis placed on picking at optimum ripeness. Simple Guyot pruning is employed. Lassaigne adds sulfur at harvest in order to keep the fruit from oxidizing. Vinification The grapes are harvested by hand at maximum ripeness, destemmed and lightly pressed. Emmanuel did a single pressing on September 17, 2012 at 6:30PM and filled three 500 liter barrels. He vinified and aged on the lees for 8 months. Aging Aged 5 years sur lattes before disgorgement in March of 2018. No dosage. Production 681 bottles. Back to Current Releases
