Soil Soil is extremely rocky. Schist and limestone.
Viticulture Matthew Rorick is currently converting all farming practices to organic.
Vinification The Chardonnay grapes were gently whole cluster pressed and lightly settled. The juice was barrel fermented with native yeast and underwent full native malolactic fermentation.
Aging The wine was aged on its own lees for 10 months in neutral 500L Puncheons and bottled un-fined and unfiltered.
Production 2 puncheons produced.
Notes This wine typically makes up the largest component of Enfield's Citrine Chardonnay, but the 2018 was so special that John decided to bottle his two favorite puncheons on their own.
