Vines are approximately 40 years old. Soil Clay and Kimmeridgian Limestone. Viticulture Dominique Moreau and her children farm their vines biodynamically. Vines are planted at a density of 8,000 plants per hectare. The one parcel is broken up into four parts depending on rootstock and vine age. All vineyard work is done by hand. Pruning does not begin until the Spring. Only copper is used in the vineyard. Vinification Grapes are lightly pressed and native yeast fermentation occurs in tank. Malolactic fermentation completes naturally. The wine was bottled in July of 2016 unfined and unfiltered. Aging The wine rests sur lattes for 26 months before disgorgement with no dosage. Production Extremely limited.

The 2017 Extra Brut Sans Soufre Présence represents the height of vinous intensity in Champagne. An unusual blend of Chardonnay and Pinot Blanc, all from the 2017 harvest, the Présence is loaded with character. The flavors are taught, brisk and intense from start to finish. Présence is a Champagne of extraordinary beauty. Given some time to open, the bubbles dissipate and what is left is truly a wine. That is not always the experience I personally look for, but the Sans Soufre Présence is truly stunning.
