Vineyard A combination of each of Clos Signadore's panels in each of the Lieux-dits Morta Piana, Morsaglia, San Angelo. A combination of young and old vines yielding 30-40 hl/ha.
Soil Mix of limestone and clay.
Viticulture Vineyards are farmed organically. Gobelet pruning starts on January, to let the vines sleep. Christophe follows the lunar cycles to guide his farming practices.
Vinification Hand-harvested in small bins, the grapes are sort on a sorting conveyor and 80% to 95% are de-stemmed. Then cold stabilization at 4ºC for 24 to 36 hours. Direct press into stainless steel with native yeast fermentation. 45 days fermentation, without pumping over or punching down. Racking at the beginning of the spring. No additions beyond sulfur before bottling.
Aging Aged three months sur lies in stainless steel tank.

Notes Is the Corsican History, the “Signadores”, have been considered capable of warding off the evil eye, the symbol of misfortune and ill fate. "A mandria" means sheepfold, the place in which Christophe makes the wines.
