François Chidaine Vintage 2019 Bottle Sizes 750ml Country France Region Loire Valley Appellation Montlouis Sur Loire Wine Type White - Still Varietals Chenin Blanc Farming Biodynamic Vineyard From a 2.5 hectares parcel with 15 year old vines under a continental climate with oceanic influences. 6600 vines per hectare. Soil The soil is composed of clays and coarse flint elements constituting "Les Perruches". The basement is composed of Tuffeau, soft limestone and white stone used in construction through which the roots create a passage. Viticulture Francois Chidaine farms biodynamically. The vine are pruned by “Guyot and “Gobelet” methods to produce a 35hl per hectare yield. No chemical plant protection products are used in the vineyard. The soils are plowed. Honey and nematicides are sown in the rows. The preparations used only come from processed vegetable, animal and mineral materials. The qualities and peculiarities of each terroir are thus respected. All vineyard harvesting is does manually. Vinification Pneumatic pressing. The alcoholic fermentation is performed by indigenous yeast present in the grape skin in demi-muids, wood barrels of 600 liter capacity. It can last up to six months. The "malolactic fermentation" is not sought. Residual sugar: 2.3g/l. Aging Aged approximately 10 months on the lees in the demi-muids. Back to Current Releases
