Vineyard Several parcels spread over 3 hectares. The vines average about between 30 - 90 years old.
Soil The soil is composed of clay and coarse elements of silex.
Viticulture Chidaine farms biodynamically. The vine are pruned by “Guyot and “Gobelet” methods to produce a 35hl per hectare yield. No chemical plant protection products are used in the vineyard. The soils are plowed. Honey and nematicides are sown in the rows. The preparations used only come from processed vegetable, animal and mineral materials. The qualities and peculiarities of each terroir are thus respected. All vineyard harvesting is does manually.
Vinification After pressing, the alcoholic fermentation is carried out by indigenous yeasts in half barrels, 600 liters capacity. It can last up to six months. The "malolactic fermentation" is not sought. The wine rests on the lees, always in big barrels. Vinified sec (2.7g/l of sugar).
Aging Aged approximately 8 months on the lees in the demi-muids. Bottled August 2018.
Notes "Despite all our efforts to protect our vines from frost, we lost 20% of our harvest on the night of April 26th to 27th, 2017. Same night as 2016! Fortunately we made the choice to group with several vine growers of Montlouis so that helicopters fly over the vineyards in the early morning and, with the help of bales of straw, they managed to save the majority of the grapes! Spring has been relatively stable, despite the famous frost of late April, as well as summer. 2017, a complicated but early year. The harvest started on September 11th and ended on October 5th." - Chidaine
