Vineyard Several parcels spread over 3.5 hectares. The vines average about between 40 - 80 years old.
Soil The soil is composed of clay and coarse elements of silex.
Viticulture The vineyard is farmed biodynamically. No chemical plant protection product is used. The soils are plowed. Honey plants and nematicides are sown in the ranks. The preparations used solely from plant, animal and mineral materials processed.
Vinification After pressing, the alcoholic fermentation is carried out by indigenous yeasts in half barrels, 600 liters capacity. It can last up to six months. The "malolactic fermentation" is not sought. The wine rests on the lees, always in big barrels. Vinified sec (2-4 g/l of sugar).
Aging Aged sur lies in old demi-muids for approximately 9 months.
Notes For Chidaine, 2015 was one of the best vintages of the past few years with rich wines, with finesse and concentration, and good length. Unfortunately, it was a small harvest.
