Georges Rémy Vintage MV Bottle Sizes 750ml Country France Region Champagne Appellation Champagne (Montagne de Reims) Wine Type Sparkling Varietals 68% Pinot Noir, 32% Chardonnay Farming Organic Vineyard From 10 parcels within four terroirs: Bouzy, Ambonnay, Louvois, Tauxières. Soil A combination of clay and chalk soils. Viticulture Each parcel is farmed organically and Rémy implements bio-dynamic practices. He along with neighboring friends Antoine Paillard (of our Champagne Pierre Paillard) and Benoît Lahaye make their own organic compost to fertilize their vines. Vinification In 2014, Rémy vinified and kept at least one barrel from each of his plots in order to understand the expression of each individual terroir. Grapes are picked and a double sorting is employed - one immediately at the vines and one before they are gently pressed. Vinification and élevage occurs "sur lies fines" in 300L barrels. Malolactic fermentation is not rushed or controlled and naturally completes. Bottled unfined, unfiltered, disgorged December 2019. Aging Tirage July 2018. Disgorged 12/2020 with 3.5g/ L of dosage.
