It is very rare to find Chardonnay planted in this village. Cuvée Les Muits is produced from the portion of the parcel which sits at the top of the hill planted to Chardonnay over a bedrock of pure chalk. The bottom of the parcel is planted to pinot noir. Vines face south-east. The parcel is made up of two massale selection plantings - one in 1971 and one in 1973. Soil Very little topsoil of clay over pure chalk bedrock. Viticulture The parcel is farmed organically and Rémy implements bio-dynamic practices. He along with neighboring friends Antoine Paillard (of our Champagne Pierre Paillard) and Benoît Lahaye make their own organic compost to fertilize their vines. Vinification In 2014, Rémy vinified and kept at least one barrel from each of his plots in order to understand the expression of each individual terroir. Grapes are picked and a double sorting is employed - one immediately at the vines and one before they are gently pressed. Vinification and élevage occurs "sur lies fines" in 300L barrel. Malolactic fermentation is not rushed or controlled and naturally completes. Aging Tirage July 2017. Disgorged 12/2020 with 0g/ L of dosage, unfiltered. Production 603 bottles Back to Current Releases
