Vineyard From a 3 hectare parcel exposed on west, north-west hills at 380 meters in altitude. The Clairette vines were planted in 1954. Yield of 65 hl/ha.
Viticulture Vineyards are farmed using organic principles and worked by hand. Harvest is done manually in September and October. Formerly called "le petit salé", the Clairette is harvested late, at the end of the harvest period.
Vinification The grapes are de-stemmed and lightly crushed. Low temperature skin maceration (5 degrees) and soft pneumatic pressing. Fermentation of the juice at normal temperature (18 to 23 degrees). Malolactic fermentation does not occur.
Aging Aged in a combination of stainless steel and concrete tanks.
