Soil Chalky clay soils.
Viticulture The soils are worked naturally without the use of any chemicals. The depth of the soils allows the roots to plunge easily and the rubbly limestone give extra minerality. The association of freshness (due to the altitude) and sufficient water in the relatively hot Languedoc climate is a perfect combination to produce wines that are elegant and precise. Yields average 35 hl/ha.
Vinification Native yeast fermentation in 20hl cement tanks. 15 day maceration.
Aging Aged for 12 months in cement tanks.
Production 10,000 bottles
