Vines are exposed south-east. Soil Dense layer of clay over chalk bedrock. Viticulture Each parcel is farmed organically and Rémy implements biodynamic practices. He along with neighboring friends Antoine Paillard (of our Champagne Pierre Paillard) and Benoît Lahaye make their own organic compost to fertilize their vines. Vinification Grapes are picked and a double sorting is employed - one immediately at the vines and one before they are gently pressed. Vinification and élevage occurs "sur lies fines" in 228L barrels. Malolactic fermentation is not rushed or controlled and naturally completes. Bottled and aged under cork closure. Unfined, unfiltered, disgorged without dosage. Aging Tirage July 2016. Disgorged 12/2020 without dosage. Production 1549 bottles Back to Current Releases
