Vineyard The Le Cotet vineyard was planted between 1964 to 1967 in the chalky hillside, furthest to the east in the Montgueux vineyards. Yields are 45-60 hectoliters per hectare.
Soil Heavy clay and chalk. Top soil is very thin.
Viticulture Each of Lassaigne's parcels are farmed organically with extra emphasis placed on picking at optimum ripeness. Simple Guyot pruning is employed. Lassaigne adds sulfur at harvest in order to keep the fruit from oxidizing.
Vinification The grapes are harvested by hand at maximum ripeness, destemmed and lightly pressed. Chardonnay experiences a élevage of 12 to 24 months on the lees in a combination of stainless steel tanks and used Burgundy barriques (4-20 years old). No new oak and no bâtonnage. Malolactic fermentation completes naturally. The wine is disgorged after 3 to 5 years in bottle. The domaine has been disgorging by hand and without sulfur for 32 years.
Aging Aged 3 to 5 years sur lattes before disgorgement. No dosage.
