Farming Organic practicing. See detailed explanation below in Viticulture Vineyard Lieu-dit Les Béguines. Les Béguines means : vine shoots swath. A bundle is composed of several béguines. 2 hectares of 40-year old pinot meunier located in the village of Gueux (west of Reims). The vineyards lies at an altitude of 120 meters. Exposure varies north to south. Soil “paleocene 59 -55 million years – limestone sand of the Thanétien” A mix of sand, limestone, and chalk with marine fossils leftover from when this area was once the seabed. Viticulture Vineyards are farmed using organic methods. Prévost calls his farming method “Undocumented viticulture: manual work has been produced after observation adapted to the natural habitat without dogmatism.” Chemical pesticides or herbicides are never used. Vines are planted at a density of 8333 to 10,000 plants per hectare. Yields are extremely low. Vinification The wine is fermented and aged in 228-liter barrels for ten months. Malolactic fermentation can occur but is never forced. Only indigenous yeasts are used. Bottling occurs slowly by use of gravity in July with a small amount of sulfur and without fining, filtering or cold-stabilization. All bottles are disgorged at one time in October of the following year. The wines are exclusively extra brut since 1998. Dosage is 2.5 grams per bottle. 87% Les Béguines basic wine + 13% still Les Béguines red wine. The still red wine is from a small section within Les Béguines. The vines in this section are affected with a virus know as court-noué (a grapevine fanleaf virus) which stunts the flowering and concentrates the juice in the surviving grapes.
