Jules Métras Vintage 2019 Bottle Sizes 750ml, 1.5L Country France Region Beaujolais Appellation Beaujolais Villages Wine Type Red - Still Varietals Gamay Farming Organic Vineyard Cuvée Bijou is a blend of parcels, one of which holds over 80 year old vines right next to their cellar in Vauxrenard. There is a parcel in the village of Lancié and in La Chappelle de Guinchay, which was passed on to him by Jules Chauvet who is famously known as “The Godfather of natural wine”. Soil Sandy, granite rich soils. Viticulture In the vines, Jules works hard and meticulously. His vines are worked organically and biodynamically, and of course by hand. It is the work done in the vines which Jules strongly believes creates true wine. Vinification Jules works in the same cellar and in the same fashion as his father, Yvon Métras. Once he believes the berries to be fully ripe and of nice concentration, the fruit is harvested, cooled down and then undergoes a gentle carbonic fermentation with natural yeast in concrete vats. Nothing is rushed in the Métras cellar, nothing! Fermentations can take over a week to simply begin. No SO2 or additions of any kind are used. Neutral barrels are used during élevage.
