Tatomer Vintage 2020 Bottle Sizes 750ml Country United States Region California Appellation Santa Barbara Wine Type White - Still Varietals Grüner Veltliner Vineyard Meeresboden is German for “Ocean Soil," in this case, sand. This wine is a blend of John Sebastiano, located in the north east corner of the Sta. Rita Hills, and Kick-on Ranch, located west of Los Alamos all grown on ancient ocean deposit soils. The common thread besides all being cool climate sites is that they share a similar soil structure of sand, diatomaceous earth, and loam. Soil Sand, diatomaceous earth, and loam. Vinification Fermented in stainless steel until Dry <(1g/L). Malolactic fermentation is blocked. Only indigenous yeast is used. The final wine is a blend of 7 different lots. From Graham on using only indigenous yeast: "This practice is challenging because I work in a shared facility, but I found a method to be both safe and authentic. I started leaving juice in buckets covered with cloth in the vineyards themselves. As I sample vineyards, I refresh the juice in these buckets to build a strong yeast fermentation rather than a bacterial one that may result from a shared facility." Aging Aged in a combination of 85% stainless steel and 15% large acacia wood barrels. Back to Current Releases
