Vinification Semi-carbonic maceration takes place during fermentation. The grapes are macerated on their skins for 15-30 days and are fermented naturally with indigenous yeast. Used Burgundy demi-muids are used during élevage. Minimal sulfur is added at bottling. The wine is bottled unfined and unfiltered.
Aging Aged for 8 months in used Burgundy demi-muids.
Production Extremely limited (2 demi-muids).
Notes After another devastating year at Domaine de la Grand'Cour - 90% yield lost due to weather and the hailstorm in July destroyed all of La Chapelle des Bois. With no fruit for Justin to create cru Fleurie, his mother came to the rescue offering him the opportunity begin using her vines to create his first vintage of Pied d'Aroux. In 2018, Justin took over farming Pied d'Aroux. 2017 is his first release.
