The Pinot Noir comes from Ecueil and the Pinot Meunier from Villedommange. Average vine age is 30 years. Soil Clay topsoil with marl and limestone below, sandy. Viticulture Organic practicing with "respect du terroir." Vines have never been treated with herbicides or chemicals. Vinification Grapes are pressed in a traditional Champagne press and juice is moved by gravity from the press to the cellar. Native yeast fermentation in demi-muid, 600L barriques as well as in stainless steel tank. Nothing is rushed during the fermentation process, natural malolactic fermentation may or may not occur but is never forced. Aging Minimum 4 years "sur lattes" before disgorgement. 4g/L dosage.
