Domaine du Collier Vintage 2019 Bottle Sizes 750ml Country France Region Loire Valley Appellation Saumur Wine Type White - Still Varietals Chenin Blanc Farming Organic Vineyard The vines of Domaine du Collier lie within small parcels which are separated from its neighbors by a 12th century wall. This is how Antoine assures us that his parcels are protected from those who use chemicals in their farming. Each of the domaine's parcels lie on the flowing hill now famously known as the Brézé commune. The domaine is split 2/3 to 1/3 - Chenin to Cabernet Franc. For the domaine blanc and La Ripaille rouge, vines range from 30 to 80 years in age. For the single vineyard La Charpentrie vines average 100 years in age. Soil Limestone rich chalky tuffeau. Viticulture The vines are farmed using organic and biodynamic principles. All vineyard work is done by hand. Vines average 35 hl/ ha. In 2014, Antoine achieved 22 hl/ha , noting to us that he wants to be at 25-30 hl/ha. During harvest, Antoine employees 25-30 people. Vinification Only wild yeast fermentation is employed. All fermentation occurs in barrel where the juice remains for two to three years without racking. There are no additions at any time during vinification and élevage. Vinification occurs underground in the very cold 10-12th century cave. Aging Aged for 3 years in a combination of used Burgundy barriques (1-3 years old). Production Extremely limited.
