Christophe Mignon Bottle Sizes 750ml Country France Region Champagne Appellation Champagne (Vallée de la Marne) Wine Type Sparkling Varietals Pinot Meunier Farming Organic/ Biodynamic practicing - in accordance with the lunar calendar Vineyard From the ‘Les Varennes’ parcel of vines in Breuil which are 35 years old in the Vallée de la Marne. Vines are exposed south, south-west. Soil A silty, green clay limestone, characteristic of the Marne valley. Viticulture Mignon employs six workers, one for each of his hectares. He treats each parcel independently and all vineyard work is done by hand. All farming is guided by the lunar calendar. Yields are kept extremely low and grapes are not picked until full maturity is reached allowing for dosage to be kept as low as possible. Vinification Two pneumatic presses of 2000 and 4000 kgs. Fruit from the single plot is vinified in stainless steel and enamel tanks for 5 months. Malolactic fermentation does not occur. Aged 4 years sur lattes and disgorged on a favorable date chosen according to the lunar calendar. This date is indicated on the label. No dosage. Aging Aged for 4 years before disgorgement. Production Extremely limited.

Mignon's 2013 Brut Nature Blanc de Noirs Pur Meunier is powerful and yet also wonderfully translucent. Candied orange peel, mint, apricot, chamomile and wild flowers take on elements of exotic richness, while high-toned aromatics add to the wine's personality. A gorgeous, artisan Champagne, the 2013 is quirky and complex, with volatile acidity that is perhaps a bit on the high side, but is also has a lot to say to readers who are willing to listen. Although not an obvious wine, the 2013 is absolutely compelling. Non-dosé. Disgorged: January 2018.
