Vineyard Martin Fontaine is a .55 hectare south-east facing parcel located at the southeastern limit of the Côte des Bars right outside the small village of Essoyes. The parcel lies only five kilometers from the border of the Côte d’Or.
Soil Argilo calcareous (clay-Limestone) and fossilized sea shells.
Viticulture "Respect the vines." All farming follows the lunar cycles and principles of biodynamics. All vineyard work is done by hand. Bénédicte and Emmanuel farm their garden, grass (hay) and animal fertilizers to use as cover crops in their parcels. Pruning does not begin until March and vines are braided to transfer energy and to naturally protect the vines against frost.
Vinification Grapes are lightly pressed and all fermentation occurs in barrel (all used Burgundy barriques). Only natural yeast is used. Primary fermentation is not rushed. Secondary fermentation begins in November.
Aging Aged for 20 months in bottle 'sur lattes'. Bottled brut nature sans soufre.
