Ruppert-Leroy Vintage 2020 Bottle Sizes 750ml Country France Region Champagne Appellation Champagne (Aube) Wine Type Sparkling Varietals Pinot Noir Farming Biodynamic Vineyard Les Cognaux is a 1.32 hectare south, south-east facing lieu-dit located at the southeastern limit of the Côte des Bars right outside the small village of Essoyes. The parcel is planted exclusively to Pinot Noir and lies only five kilometers from the border of the Côte d’Or. Soil Clay-Limestone with a majority of gray clay. The vineyard is filled with fossilized sea shells. Viticulture They apply the principles of biodynamics and farm organically. Vinification Grapes are lightly pressed and all fermentation occurs in barrel for 9 months, fûts and demi-muids (all used Burgundy barriques). Only natural yeast is used. Primary fermentation is not rushed. Malolactic fermentation occurs naturally. The champagne is bottled without dosage and without sulfur. Aging Aged for 20 months in bottle 'sur lattes'.
