Soil Clay, Clay-limestone
Viticulture To offset two consecutive years of hail (50% loss in 2006 and 100% loss in 2007) and since the 2007 vintage, Elian buys grapes from a winegrower friend who owns a very nice plot of vines planted on clay-limestone. The grapes purchased are produced with strict specifications and are intended only for this cuvee.
Vinification Merlot and Cabernet Franc are destemmed, then put into opened concrete tank beetween 10 and 15 days. Gentle extractions. The Abouriou is put into tanks in whole clusters and vinified with semi-carbonic maceration.
Aging Aged for 10 months in foudre and barrique followed by 1 month in concrete vats before bottling.
