Viticulture A selection from all of Ceritas' sites nestled in the West Sonoma Coast including Hellenthal, Elliott, Occidental and Porter-Bass. Yields are small at 2.6 tons/ acre (33hl/ ha). Calera, Mt Eden and Swan clones. Vines are 15 to 45 years old.
Vinification Hand harvested and intensely sorted at the winery ensures only the best fruit goes to tank. Fermented with a lower percentage of whole clusters (15%) than the site specific wines results in a beautiful fruit forward wine. Free run juice is fermented for 15 days after a light pressing.
Aging Aged for 16 months in oak barrel (15% new).
Notes "The vintage produced a winemaker's palette of pieces to choose from. Hellenthal gave us the earth and garrigue. Elliott gave us rose petals and juicy acidity. Occidental provided mineral depth. Porter-Bass rich fruit and mineral laden acidity. All in all, the wine captures the unique nature of this vintage perfectly." - John Raytek
