Vineyard Clos Sainte-Sophie is a unique clos in the center of Montgueux. The vines were planted in 1968 and 1975.
Soil Heavy clay and chalk
Viticulture Each of Lassaigne's parcels are farmed organically with extra emphasis placed on picking at optimum ripeness. Simple Guyot pruning is employed. Lassaigne adds sulfur at harvest in order to keep the fruit from oxidizing.
Vinification The grapes are harvested by hand at maximum ripeness, destemmed and lightly pressed. The wine is vinified in a combination of used Cognac, Burgundy, and Jura (from Ganevat's Savagnin barrels) barrels for approximately 6 months on the lees. The juice is then moved to stainless steel tank for approximately 2 months before being bottled.
Aging Aged 6 years sur lattes before disgorgement with no dosage
