Vineyard 3 hectare parcel of 40-60 year old vines. This is one of Vouvray's legendary sites as it is the only vineyard in Loire referred to as 'Grand Cru'. Chidaine purchased the vineyard in 2006.
Soil The soil consists of deep clay and white chalk. The subsoil is composed of tuffeaux (soft white limestone) through which the roots go deep.
Viticulture Vineyards are farmed using biodynamic methods and simple guyot pruning. Vines are planted at a density of 6600 vines per hectare.
Vinification After pressing, the alcoholic fermentation is carried out by indigenous yeasts in half barrels, 600 liters capacity. It can last up to six months. The "malolactic fermentation" is not achieved. Vinified sec. 1.6 grams/ liter of residual sugar.
Aging Aged sur lies in old demi-muids for approximately 10 months.
