Vineyard From a 0.1595 hectare east facing parcel Yann purchased in 2005. The parcel was rented to his father until 2014. Vines are 80 years old and sit right below Clos Saint Jacques.
Soil Clay limestone.
Viticulture Vines are farmed organically and simple guyot pruning is employed. All vineyard work is done by hand. Vines are planted at a density of 10,000 plants per hectare.
Vinification Once harvested, all grapes are fully de-stemmed, undergo a cold maceration and are fermented with natural yeasts. Yann prefers a long, slow élevage on the fine lees. The grapes are pressed to tank and racked to barrique where it rests for 18 months.
Aging Aged in barrique (50% new) for 18 months. Bottled unfiltered.
