Viticulture The vines are farmed biodynamically by Benoît; worked by hand and horse, treated with compost tea, and sprayed with copper. Simple Guyot pruning is employed. Vines are planted at 8,000 plants/ hectare. Yields are approximately 60 hl/ ha.
Vinification Vinified and aged in a combination of 228L, 300L, 500L, 600L barrels and 22hl foudres with natural yeast at 12 degrees celsius (thus avoiding the occurrence of malolactic fermentation) for 10 to 12 months. The oak for the barrels are made from trees owned by Déhu in Meilleray and fabricated by a barrel maker in champagne. Each year approximately 10% new oak is used. Unfined and unfiltered.
Aging The wine rests sur lattes for approximately 24 months. Disgorged in July with no dosage.
Production 6,000 bottles.
Notes The name of the cuvée "La Rue des Noyers" owes its name to an old plantation of walnut trees that line the vineyard.
Publication Vinous Rating 94
The NV (2015) Extra Brut Cuvée La Rue des Noyers speaks with real authority, and yet the 2015 is one of the more delicate versions of this cuvée so far. Time in the glass allows the wine to blossom nicely. Dried pear, smoke, herbs and dried flowers fill out the wine's creamy frame effortlessly. Once again, the Rue des Noyers is one of the most distinctive wines in Champagne. Dosage is 1 grams per liter. Disgorged: July 2017.
