Soil A silty, green clay limestone, characteristic of the Marne valley.
Viticulture Mignon employs six workers, one for each of his hectares. He treats each parcel independently and all vineyard work is done by hand. All farming is guided by the lunar calendar. Yields are kept extremely low and grapes are not picked until full maturity is reached allowing for dosage to be kept as low as possible.
Vinification Each plot’s produce is stored separately in stainless steel or enameled steel tanks. Bottled in 2015 with careful control of the second fermentation. After an average “in bottle” aging of 24 months each cuvée is disgorged on a favorable date chosen according to the lunar calendar. This date is indicated on the label. Bottled brut with 7-9 g/l of dosage (cane sugar).
