Viticulture Vineyards are farmed using organic methods. All vineyard work is done by hand. Yields are low at the domaine, approximately 28 - 35 hectoliters per hectare depending on the vintage.
Vinification Pico uses a "champagne press" at the domaine to allow for a very slow and delicate press of the grapes. All juice moves downstairs to the vinification settling room by gravity through a drain at the bottle of the press. All wines are fermented using only indigenous yeasts and élévage is slow and long lasting around 14 months in a combination of cement eggs and/or old Burgundy barrels and demi-muids. The juice is racked, blended, and placed in stainless steel tanks before bottling. The juice is racked and finished in stainless steel tanks before being bottled without fining and filtration.
Aging Aged for 14 months in a combination of cement egg and used demi-muids.
