Farming 90% Organic / 10% Sustainable
Vinification Native fermentation. All varieties were picked and fermented separately with no temperature control and no additions. The Semillon was destemmed and fermented on its skins for 3 weeks. The wine fermented in a mix of neutral barrels, concrete, and stainless steel and blended together after malolactic fermentation. The 2018 was gently filtered before being bottled with minimal effective sulfites.
