Vineyard From a 0.4405 hectare parcel in Lieu-dit Les Vaudayants in Bouzy Grand Cru planted by sélection massale in 1975. Vines are exposed south, south-east.
Soil 70 cm of clay on limestone bedrock.
Viticulture The parcel is farmed organically and Rémy implements bio-dynamic practices. Vines are simple Guyot trained. He along with neighboring friends Antoine Paillard (of our Champagne Pierre Paillard) and Benoît Lahaye make their own organic compost to fertilize their vines.
Vinification Grapes are picked and a double sorting is employed - one immediately at the vines and one before de-stemming and gentle pressing. Native yeast fermentation. 16 day maceration in 500L barrels. Vinification and élevage occurs in barrel.
Aging Aged for 21 months in 2, 3 and 4 year old barrels. Bottled July 2016 unfined and unfiltered.
