Boudignon Anjou Blanc à François(e) 2019

Thibaud Boudignon Vintage 2019 Bottle Sizes 750ml Country France Region Loire Valley Appellation Anjou Wine Type White - Still Varietals Chenin Blanc Farming Biodynamic Vineyard A François(e) is of one parcel of vines lying on a pure schist hilltop. Vines average 35 years in age. Soil Schist. Very little topsoil. Viticulture Vineyards are farmed using organic and biodynamic principles. All vineyard work is done by hand. Harvesting of the grapes occurs as quickly as possible with a large team to ensure the proper acidity levels are maintained. Vinification Grapes are destemmed and pressed very gently immediately after harvesting. Free run, first pressed juice is used. All juice is contained at 3 degrees celsius until harvest is completed. Fermentation and élevage decisions are made once harvest is completed and Thibaud has a complete understanding of the yields and the harvest. The à François(e) parcel is vinified and aged in approximately 20% new French oak barrels (a variety of sizes) and lightly toasted Austrian Stockinger barrels. Fermentation takes place at 12 degrees celsius using only native yeasts. Aging Aged in a combination of 600L, 320L "cigars", and 500L lightly toasted Austrian Stockinger barrels for 12 months. Approximately 20% new oak is used. Then in Inox tank for 6 months before bottling. Production Extremely limited. Notes Thibaud harvests his parcels using 30 harvesters in only 4 days! Harvesting is very fast as Thibaud harvests later than other growers to ensure optimal ripeness of the fruit before picking. Back to Current Releases
