Soil Dense layer of clay over chalk bedrock. Viticulture Each parcel is farmed organically and Rémy implements biodynamic practices. He along with neighboring friends Antoine Paillard (of our Champagne Pierre Paillard) and Benoît Lahaye make their own organic compost to fertilize their vines. Vinification In 2014, Rémy vinified and kept at least one barrel from each of his plots in order to understand the expression of each individual terroir. Grapes are picked and a double sorting is employed - one immediately at the vines and one before they are gently pressed. Vinification and élevage occurs "sur lies fines" in 3, 300L barrels and 1, 300L "cigar" barrel. Malolactic fermentation is not rushed or controlled and naturally completes. Aging Tirage July 2017.
