Viticulture Organic conversion officially began in 2018. Vincent Lelièvre has been working towards organic certification for 10 years. Vines are trained Guyot simple and are planted at a density of 5,500 plants/ hectare.
Vinification Harvested manually at the beginning of October and pressed directly after. Fermented using native yeast in Inox tank. The two parcels were vinified and matured on the lees separately in stainless steel vats and then blended a few weeks before bottling.
Aging Aged 4 months on the lees in stainless steel vat.
Production 2,000 cases produced.
Notes The Pinot Auxerrois, an aromatic selection of Pinot Blanc, is the white grape that best adapted to the northern climates of the North East of France. It was developed in Lorraine on clay and limestone soils because it was necessary to replant the vineyard after the “phylloxera crisis”. At Lucey, it is the first to reach maturity and its organoleptic qualities are highly appreciated by professionals.
