François Chidaine Vintage 2016 Bottle Sizes 750ml Country France Region Loire Valley Appellation Vouvray Wine Type White - Still Varietals Chenin Blanc Farming Biodynamic Vineyard From a sélection of different parcels among Chidaine's 10 hectares in Vouvray. Soil The soil consists of deep clay and white chalk. The subsoil is composed of tuffeaux (soft white limestone) through which the roots go deep. Viticulture Vineyards are farmed using biodynamic methods and simple guyot pruning. Vines are planted at a density of 6600 vines per hectare. Vinification After pressing, the alcoholic fermentation is carried out by indigenous yeasts in half barrels, 600 liters capacity. It can last up to six months. The "malolactic fermentation" is not achieved. Aging Aged sur lies in old demi-muids for approximately 11 months. Production Extremely limited. Notes In 2016, François lost 90% of his harvests because of the frost on April 27, 2016. Chidaine remarks it “hit us hard … After a very rainy spring, the summer and the late season were much more favorable which allowed us to harvest a small, but very high quality harvest.” Back to Current Releases
