Vineyard From 5 parcels for a total of 5 hectares in Parnay. Vines ranging from 15 to 50 years in age. The parcels lie in two vineyards: Les Varennes and Pierres Blanches. Soil of sandy clay mixed with limestone leads to better drainage and a lighter - fruit forward expression of Cabernet Franc than the domaine's other parcels.
Soil Sand and clay (deep) topsoil over tuffeau. This parcel has the highest amount of sand when compared to the domaine's other parcels.
Viticulture The vines are hand harvested in small bins and farmed biodynamically. Yield is approximately 30hl/ha. All of Yvonne's Cabernet Franc parcels are farmed using biodynamic principles and guyot pruning. Vines are planted very densely at approximately 8000 vines per hectare.
Vinification Native yeast fermentation in concrete vats. 30 percent of the juice underwent carbonic maceration (first time since 2011). No oak is used. Bottled unfined and unfiltered.
Aging Aged for 8 months in concrete vats - no barrel is used in this cuvée.
