Gérard Boulay Vintage 2019 Bottle Sizes 750ml Country France Region Loire Valley Appellation Sancerre Wine Type White - Still Varietals Sauvignon Blanc Farming Organic Vineyard Boulay began farming these old vines on the Monts Damnés vineyard in 2004. The vines lie on the vineyard's steep slope with an average age of over 45 years. The vines face south allowing for optimal sunlight throughout the year. This is one of Chavignol's top crus along with La Grande Côte and Clos de Beaujeu. Soil Marne kimmeridgean "terres blanches" (clay limestone) Viticulture As with each of Boulay's vineyards, organic methods are used as Gérard works the soils and harvest the grapes by hand. Vinification Fermentation always occurs naturally. Only natural yeast is used as nothing is added and no manipulation ever occurs. Élevage is approximately 10 months in a combination of stainless steel tank and 300 liter barriques (at least 3 years old). No new wood is ever used. Bottling occurs right before the following harvest allowing the wines to spend as much time on their lees as possible. Aging 10 months on the lees in a combination of 330 liter barrel and tank.
