Vineyard Located in the Mont Damnés vineyard, these vines are over 50 years old and sit in the vineyards premier locations. The vines lie on the vineyard's steep slope facing south thus allowing for optimal sunlight throughout the year. Boulay began farming these old vines on the Mont Damnés vineyard in 2004.

Viticulture As with each of Boulay's vineyards, organic methods are used as Gérard works the soils and harvest the grapes by hand.
Vinification Fermentation always occurs naturally. Only natural yeast is used as nothing is added and no manipulation ever occurs. Élevage is approximately 10 months in a combination of stainless steel tank and 300 liter barriques (at least 3 years old). No new wood is ever used. Bottling occurs right before the following harvest allowing the wines to spend as much time on their lees as possible.
Aging 10 months on the lees in a combination of 330 liter barrel and tank.
