High concentration of rocks pushes the vines to their limit. The Calera clones were planted over 30 years ago. Soil Blue schist and quartz soils with moderate clay content. Well drained due to underlying bedrock. Viticulture Vineyard is dry farmed and cane pruning is employed to maximize fruit budding potential. Vines yield 1.2 tons/ acre (15 hl/ha). Vinification Hand harvested and intensely sorted at the winery ensuring only the best fruit goes to tank. The grapes are fermented with 75% whole cluster and 25% de-stemmed for 19 days. Free run and light pressings. Aging Aged for 16 months in a combination of neutral french oak barrels and 30% new oak. Very precise bouquet of tart cherry, black raspberry, and violet aromas – quintessential Occidental. The palate is medium-bodied with a gentle grip (50% whole cluster) with moderate acidity. Good structure with a noticeable saline finish lingers in the mouth, revealing flavors of dark cherry, cinnamon, and nutmeg. Perfectly balanced with juicy long finish.
