François Chidaine Vintage 2016 Bottle Sizes 750ml Country France Region Loire Valley Appellation Montlouis-sur-Loire Wine Type White - Still Varietals Chenin Blanc Farming Biodynamic Vineyard Vineyards are farmed using biodynamic methods and simple guyot pruning. Vines are planted at a density of 6600 vines per hectare. Montlouis Moelleux is of different parcels in Montlouis, vines under a continental climate with oceanic influences. Soil The soil is composed of clays and coarse flint elements constituting "Les Perruches". The basement is composed of Tuffeau, soft limestone and white stone used in construction through which the roots create a passage. Viticulture No chemical plant protection product is used. The soils are plowed. Honey plants and nematicides are sown in the ranks. The preparations used solely from plant, animal and mineral materials processed. Vinification Pneumatic pressing. The alcoholic fermentation is performed by indigenous yeast present in the grape skin in demi-muids, wood barrels of 600 liter capacity. It can last up to six months. The "malolactic fermentation" is not sought. Residual sugar: 70g/l. Aging Aged sur lies in old demi-muids for approximately 10 months. Production Extremely limited. Notes In 2016, François lost 90% of his harvests because of the frost on April 27, 2016. Chidaine remarks it “hit us hard … After a very rainy spring, the summer and the late season were much more favorable which allowed us to harvest a small, but very high quality harvest.” Back to Current Releases
