François Chidaine Vintage 2018 Bottle Sizes 750ml Country France Region Loire Valley Appellation Montlouis Sur Loire Wine Type White - Still Varietals Chenin Blanc Farming Biodynamic Vineyard Several parcels spread over 3 hectares. The vines average about between 30 - 90 years old. Soil The soil is composed of clay and coarse elements of silex. Viticulture Chidaine farms biodynamically. The vine are pruned by “Guyot and “Gobelet” methods to produce a 35hl per hectare yield. No chemical plant protection products are used in the vineyard. The soils are plowed. Honey and nematicides are sown in the rows. The preparations used only come from processed vegetable, animal and mineral materials. The qualities and peculiarities of each terroir are thus respected. All vineyard harvesting is does manually. Vinification After pressing, the alcoholic fermentation is carried out by indigenous yeasts in half barrels, 600 liters capacity. It can last up to six months. The "malolactic fermentation" is not sought. The wine rests on the lees, always in big barrels. Vinified sec (2.7g/l of sugar).
