Cool morning air from San Pablo Bay sinks down in the Coombsville Bowl and doesn’t break up until the afternoon, creating a long and mild growing season. The vines are planted in deep, alluvial, cobblestone topsoil. Below, a layer of white, powdery volcanic ash stores tiny amounts of moisture and allows the fruit to maintain acidity and develop an elegant and refined tannin structure. The vines are pruned using both Cordon and Cane methods. Cane pruning naturally protects against sterile shoots. Vines are over 20 years of age. Yields are 40 to 45 hl/ hectare. Vinification The grapes were fermented 100% whole cluster in concrete at very cool temperatures. They were gently foot tread 1-2 times a day through a short cold soak and 16 day native yeast fermentation. The wine spent 16 months in barrel on the lees and was bottled un-fined and unfiltered. Aging Aged for 16 months in barrel on the lees. Production 4 barrels Notes The 2015 vintage produced a small and concentrated crop at Haynes. Combined with the cool fermentiation in concrete, the wine is more concentrated and slightly higher in alcohol than previous vintages – but still extremely high toned and floral, with great mineral persistence on the palate.
