Vineyard Clos des Maladries lies in the Grand Cru village of Avize. The 0.15 hectare parcel is south facing, sits behind Etienne's grandparents' home, and was planted by his grandfather. It is their Monopole. The majority of the vines are over thirty years old. Soil Clay over chalk bedrock. Viticulture Planted with grass cover crops, plowed by horse, and farmed following lutte raisonnée methods (they are farming organically since 2013 but aren’t certified). Zero herbicides used. Vinification Grapes are lightly pressed and fermentation occurs in a combination of 1/3 barrique and the rest stainless steel tank. Only native yeast is used. Malolactic completes naturally.
