Champagne Extra Brut Pur Meunier 2013/2014

Majority of vines were planted in 1976 and face south, south-west. Average age of the plots is 41 years. Soil A silty, green clay limestone, characteristic of the Marne valley. Viticulture Mignon employs six workers, one for each of his hectares. He treats each parcel independently and all vineyard work is done by hand. All farming is guided by the lunar calendar. Yields are kept extremely low and grapes are not picked until full maturity is reached allowing for dosage to be kept as low as possible. Vinification Mignon vinifies and pays homage to each of his 30 parcels individually. Primary fermentation lasts three to four weeks in stainless steel tanks and temperature control is only manipulated by opening the cellar doors. The parcels are blended together in April. Malolactic fermentation is naturally avoided. The wines are aged 24 to 30 months in bottle. After disgorgement, 3 grams/ liter of dosages is added (organic sugar cane to create the liquor). A wine of real finesse and nuance, Mignon's NV Brut Nature Blanc de Noirs Pur Meunier is exquisite. Rich, layered and vinous, but never heavy, the Blanc de Noirs Pur Meunier speaks to grace above all else. The flavors are distinctly floral and savory, while the fruit lies more in the background. Hints of dried pear, brioche, dried herbs and flowers meld into the gracious, mid-weight finish. This is an especially understated wine from Christophe Mignon. The current release is equal parts 2013 and 2012 vintages, bottled with no dosage. Disgorged: February 2016.
