Farming Without the use of pesticides for 15 year, organic principles. Vineyard The 0.71 hectare lieu-dit Les Montées lies in the village of Ormes, just west of Reims in the Petite Montagne. Vines average 40 years old and lie 109 meters in altitude with southern exposure. Light and well-drained soils. Soil Silt and calcareous sands. Viticulture "Every action has been adequately thought out. Of course our land is plowed and we also use weed control to limit disease. This vegetation cover avoids herbicides, insecticides and anti- rots. Everything begins with the soil. The fertilization is organic. They feed wildlife which in turn feeds flora and thus the soil is working. As a result the House Bérêche has one of the lowest treatment frequency index in the Champagne region. It is also among the first to be certified High Environmental Quality (level 3)." Vinification A slow fermentation occurs on the lees in neutral french oak barrels. The second alcoholic fermentation "Prise de mousse" occurs under cork sur lattes for 36 months. All bottling occurs under natural cork. Dosage: 3.5g/l. Aging Aged sur-lattes for 36 months under natural cork. Disgorgement in March. Production 5,830 bottles. Notes Campania Remensis is the Roman name for the countryside around Reims.
