Soil Mica-schist Viticulture Vineyards are farmed organically. Simple Guyot pruning is employed. "Labours et griffages des sols, travaux en vert." = Soils are worked, plowed, and scratched by hand. Green work. Vinification The juice is gravity fed. There are no pumps used in the cellar. Whole cluster fermentation for 10 days without draining any juice. Wild yeast fermentation only with no racking. Grapes are pressed directly via pneumatic press. All vinification in stainless steel tanks. Aging Aged in 450 litres Amphores for 9 months. Bottled without fining, filtration, and with minimal SO2 (<15 mg/L). Production 3,690 bottles.
