Foot tread, 100% whole cluster pressed. Ambient yeasts. Neutral oak French barrique. Lees aged in barrel for 11 months. Racked once prior to bottling. Finished at 11.15% abv, a TA of 8.4 g/l and a 3.35 PH. Aging Aged for 12-months in neutral oak. Production 310 cases Notes Transparent aromas of wet marble, petrichor and zesty citrus zest lead into flavors just as clean, fresh & bright. The mouth-feel is light and billowy with a streak of concentrated apple laced fruit; honeyed fig and mineral laden length that reveals a concentration & intensity that bode well for the future.
